I think it would be convenient to update the Dockerfile and replace the get-poetry.py url with this one

ow why ? any issues ? I think poetry is getting better and the 1.2.0 comes with several features ..
PR welcome to change the way of installing poetry, for now. I'll think about removing it or not later.
