Currently all the menus, including the initial title screen have plain white background, which can be distracting and sometimes even blinding when playing at night.

My suggestion would be to include a night-friendly option of dark mode of some kind.

For now, I have resorted to just patching the white background everywhere to gray but it obviously looks ugly and is less readable than a proper fix.

This request seems intelligent and I support it for the following reason : personally I play in the evening on a video projector because I am visually handicapped. When there is a difficult passage and you die 20 or 30 times in a row, you catch the white screen in your eyes and it is particularly aggressive in a black room. I've gotten into the habit of putting my hand over my eyes to protect myself, but it's not ideal.
Thank you for the initiative, I wouldn't have dared to ask

Implementing dark theme is a lot of work.
But I made a setting specifically for the case above. When the new version arrives, open the console (with ` or info+esc) and paste this: settings Graphics WSOD 0 . Press Enter. This will disable white screen of death.
To turn the white screen back, enter in the console: settings Graphics WSOD 1
Don't forget capital letters, the command is case-sensitive.

first of all thank you for taking time and proposing a solution which is very welcome ;-)
but...I don't know anything about computer programming... I don't know what it means "open the console" and I can't see a touch on my keyboard named "info"...really sorry to be so noob....
When you say "when the new version arrives" does it mean that it does not work with v 0.6.2 ?
If you could specify please ? thank you in advance ;-)

Still haven't find (understood) where and when to use this correction (settings Graphics WSOD 0) in v0.6.4...

I'm not Nathan.
Can you open the console by ` key (it's on the top left) , or info+esc (q+esc) keys?

As I am on anAZERTY keyboard, Q+ESC runs perfectly
I copy/past the magic words and now the white screen of the death is gone !
You made my day, it’s a small detail that makes a big difference in visual comfort for me.
