Exhibitor Docker image is built off pom in master branch

Even if it's only a pom referring to a correct (released) version of exhibitor, it still sounds a bit scary to me - I'd say it should be built based on a fixed commit, preferably the latest release tag (v1.5.6 at the moment), rather than HEAD that can potentially break anytime (again, seems low risk if it's just the pom, but still...).
