In so doing, also updated to strictly use Ubuntu 22.04 base images for all Dockerfile targets for now so as to avoid inconsistent FUSE versioning in e.g. Alpine. Also updated docker-compose.yml file to expressly empower FUSE-mounting containers with all necessary privileges.
