你说的对，但是广东这边的牛杂或者羊杂都是会加上河粉、方便面、粉丝一类的一起卖而不是单卖牛杂和汤。
不过那种的也有，叫卤牛杂，类似麻辣烫那种一串一串的。

可以分开写，像是北方羊杂汤牛杂汤一般配饼，但是只吃也没有问题的
