Update pinouts doc for v0.61 #43

This is largely based on the v0.61 schematic. Aside from the corrected pins, there's now a 120Ω CAN termination resistor (R38), so that note was updated accordingly, as well.

I spent hours trying to figure out why my stepper wouldn't move. Would be great to merge this so the docs are up-to-date.

Maybe we should note somewhere that the pin was different in earlier revisions of the board though. Otherwise people with the old boards will run into the same problem. 🤔

I hugely agree with this, Like Stefan I spent many hours trying to figure out why my stepper wouldn't move and was just about to return them as defective. There was no mention on the docs that the enable pin had changed between versions.
