# Vegetable soup


## Ingredients

- 1 tablespoon olive oil
- 1 onion, chopped
- 2 garlic cloves, minced
- 2 carrots, sliced
- 2 celery stalks, sliced
- 1 zucchini, chopped
- 1 potato, peeled and diced
- 1 can (14.5 oz) diced tomatoes
- 4 cups vegetable broth
- 1 bay leaf
- 1 teaspoon dried thyme
- 1/2 teaspoon dried basil
- Salt and pepper to taste
- Fresh parsley, chopped (optional)


## Instructions

1. **Heat oil**: In a large pot, heat the olive oil over medium heat.
2. **Sauté vegetables**: Add the chopped onion and garlic. Sauté until the onion becomes translucent, about 5 minutes.
3. **Add carrots and celery**: Stir in the sliced carrots and celery. Cook for another 5 minutes.
4. **Add remaining vegetables**: Add the chopped zucchini, potato, and the can of diced tomatoes (including the liquid).
5. **Pour in broth**: Stir in the vegetable broth, bay leaf, thyme, and basil. Bring to a boil.
6. **Simmer**: Reduce the heat and let the soup simmer for 25-30 minutes, or until the vegetables are tender.
7. **Season**: Add salt and pepper to taste. Remove the bay leaf.
8. **Serve**: Ladle the soup into bowls and garnish with fresh parsley if desired.
