One consideration - it might be worthwhile to leave the end of life dates in for the older versions. Sometimes, seeing how far out of the support window they are is the kick an org needs to get to updating. |

updating core version table so dbt v1.0 and 1.1 are correctly marked as eol and not deprecated. this is bc dbt v1.0-1.3 are still available in cloud and not fully removed/supported.

this pr also consolidates the table columns 'support level and critical support until' as they can get redundant when versions are eol or deprecated.
