This PR updates the TS SDK version that the connector uses to the latest version, v6.1.0.
It also updates ts-node-dev to use a Hasura-forked version that fixes some deprecated dependencies that package uses. Those fixes have been sent upstream, but ts-node-dev seems unmaintained, so a fork was made to just make them usable here.
The readme has also been updated with the latest CLI instructions.
Fixes NDC-415 and NDC-416.
