This PR updates the NDC TypeScript SDK to v7.0.0 which brings support for exporting OpenTelemetry over GRPC. The defaults are changed so that GRPC is used. This behaviour now matches the Rust NDC SDK and therefore Rust-based connectors.
The connector version has been bumped to v1.8.0.
