chore: temporarily pin mysql image to avoid test regressions

As seen in #754 this is necessary to make tests pass. Broken by docker-library/mysql#1024 / docker-library/official-images#16088 AFAICT. Detected by a @cloudbees PCT regression. In case anyone cares

Future image updates (if desired) would be possible after picking up some future release of testcontainers/testcontainers-java#8131.
