Changes
Do not merge: is updating to the main branch of build, will be changed to v0.14.0 once available.
This updates the build dependency and with it all related dependencies like Kubernetes etc with necessary adjustments like pointer to ptr. I am also updating the e2e to use test with Kubernetes 1.29 and 1.31 and Tekton 0.56.
