[ACM-7785] Updated hive to latest mce-2.4 commit

Description

Updated config to use latest hive config. For this build we are using the --image-repo and --image-tag-override field to update the build, since by default the script is pulling from the app-sre/hive repo in quay. That repository doesn't have the image built for the commit we are selecting; therefore, we will use the stolostron repo and use the image that was built and made available to us.

Changes Made

Updated scripting to include an image-repo and image-tag-override option for us to enable it in the config.yaml file. This will allow us to pull from our repo, along with the image that was built the latest.
