## 前言

最近在学做饭,于是乎在B站抖音小红书上看了不少菜谱...但是我真的很讨厌看视频,为什么不能把步骤清晰的写成文字...

于是受[程序员做饭指南](https://github.com/Anduin2017/HowToCook)的启发,我决定把**自己做过觉得没有问题**的菜谱也写成文字的形式,所以有了这个专题。

## 正文

今天做的是皮蛋瘦肉粥,已经做了好几次了,没有翻车,味道还不错

- 大米
- 大概150克,淘洗两遍
- 浸泡15分钟
- 皮蛋
- 两个,蒸2-3分钟(去掉碱味,更好剥壳)
- 放凉
- 瘦肉(里脊肉最好,口感更嫩滑)
- 切成薄片,改刀成细丝,再成短细丝
- 装碗
- 生姜
- 切片,改刀切丝
- 装碗
- 香葱
- 只要葱叶,切成葱花
- 装碗
- 香菜(可选,或青菜叶)
- 装碗
- 姜丝
- 取一半加入肉末
- 一勺料酒
- 两勺生抽
- 适量胡椒粉
- 抓拌均匀
- 加入食用油锁水
- 腌制
- 大米
- 放入砂锅
- 加入7-8倍清水(水开之前用勺子搅动)
- 水烧开后加入食用油一点
- 小火焖煮25分钟
- 皮蛋
- 凉透后剥壳
- 改刀切开成小块(如果粘刀可以在刀上抹一点水)
- 砂锅
- 加入剩余姜丝
- 倒入皮蛋(搅动),煮5-6分钟
- 调味
- 食盐
- 胡椒粉
- 鸡精
- 搅拌
- 肉末
- 倒入,用筷子快速划开,将肉沫煮至变色
- 倒入香菜、香葱,搅拌均匀,用粥的余温烫熟
- 小磨油
